Oil-Free Balsamic Dressing

Salad Dressing Ingredients

This is my favorite go-to salad dressing. Except for soaking the chia seeds , it comes together so quickly. Make a double batch and you will always have a dressing handy. This dressing also works well on steamed greens and roasted veggies. Enjoy!

Makes approx. 1 1/2 Cups

Ingredients

2 Tbsp. chia seeds

1/2 cup hot water

1/4 cup brown rice vinegar

1/4 cup white balsamic vinegar

1/2 cup aged balsamic vinegar

2 Tbsps. mustard (of your choice)

Pepper to taste (optional)

 

Directions

  • In a large jar, combine 2 Tbsp. of chia seeds with the hot water. Let sit for approx. 1/2 hour, or until seeds have expanded.
  • Transfer soaked chia seeds and all remaining ingredients to a blender. Blend until smooth. Transfer back to jar and refrigerate.

Notes
Quality of vinegars makes a big difference in taste. I use an 18-year old balsamic vinegar for my dressing.

Variation (added July 12,2016)

  • instead of mustard use 1 Tbsp. of white mellow miso

Variation (added 1/27/2017)

  • instead of white balsamic vinegar, use 1/4 cup of Red Wine Vinegar

    There are peppercorns in the picture, but no pepper in the ingredients list. Is there supposed to be pepper in this recipe?
