Super Simple Overnight Oatmeal

Overnight Oatmeal

 

This is my breakfast of choice. I eat it most mornings and it is sooo good and keeps me full and satisfied for a long time. The original recipe comes from Mary McDougall and you can find it on Dr.McDougall’s website, a fantastic free resource for plant-based living. I adapted the recipe ever so slightly.

Serves 1

Ingredients

3/4 cup rolled oats

couple dashes of cinnamon

1 cup boiling water

1 Tbsp. ground flax meal

1/2 cup of fresh or frozen blueberries (thawed)

1 small banana, chopped

Directions

  • place oatmeal in a bowl, add cinnamon.
  • bring 1 cup of water to a boil and pour over oatmeal and stir
  • let sit overnight
  • in the morning add flax meal, blueberries and banana. Stir to combine.

Enjoy!

Notes

You may need to adjust the the amount of rolled oats for yourself. I started out with 1/2 cup. But that was not enough. You may even need a whole one. Adjust the water amount by 1/4 cup up or down.

This is also my travel breakfast of choice. I measure out all the dry ingredients into ziplock bags and just add water and fruit at my destination.
