This is a tasty twist on mashed potatoes and takes no extra time. You boil the potatoes and turnip together, drain and you are ready to do the mashing. That easy! Great as a side dish or as your main starch as the center of your plate. Enjoy!
Serves 4 as a side dish or 2 as a main dish
Prep time: 15 minutes Cook Time: 12-15 minutes
Ingredients
1 large turnip, peeled and chopped into 1″ pieces (approx. 2 very generous cups)
12 small potatoes (Yukon gold, approx. 1 1/2 lbs), scrubbed, chopped into 1″ pieces . I like to leave the peel on (optional)
brown rice vinegar, to taste
1/2 Tbsp. Dijon mustard (or more to taste)
1/2 Tbsp. nutritional yeast (or more to taste)
2 Tbsp. chives, finely minced
Black pepper, to taste
Directions
- In a large pot boil potatoes and turnip together until soft
- drain potatoes and turnips and return to pot.
- sprinkle brown rice vinegar over potatoes, add mustard, nutritional yeast, chives and black pepper and mash. I like my mash on the chunky side.
- add a few extra chives for serving.
