Oh, this sauce is sooo good. I think, I found my new “it” sauce. Smooth tahini gives is that creamy mouthful, fresh lemon juice and miso paste add the tang and a medjool date a hint of sweetness. What more can I say: try it on everything!
Makes approx. ¾ cup
Prep Time : 10 minutes Cook Time: 0 minutes
Ingredients
¼ cup water
¼ cup white balsamic vinegar
¼ cup tahini
2 Tbsp. fresh lemon juice
1 medjool date, pitted
1 tsp. white mellow miso paste
Directions
- Combine all ingredients in a high-speed blender. Blend at high-speed until all ingredients are well integrated and sauce is smooth and creamy.
- Adjust liquids to taste.
Notes:
If you are using a regular blender, you may need to soak date in hot water for 20-30 minutes to achieve smooth consistency.
Use a high quality white vinegar; it makes a huge difference in taste.
Use this sauce as a mayonnaise substitute in salads and as a spread.
This sauce was inspired by a recipe in one of my favorite cookbooks: The PlantPure Nation Cookbook, by Kim Campbell.
1/4 CUP vinegar?? or 1/4 some other measure?
