Home-Away Salad Dressing

On-the-road Salad Dressing/nourishyourselfnow.com

This dressing is a combination of two. While traveling I did not have my usual vinegars and equipment handy. So, I combined my favorite two salad dressings: Oil-free Balsamic and Roasted Red Pepper Sauce. Give it a try, even when you are not traveling. The ingredients are somewhat approximates.

Makes about 1 cup

Ingredients

1 Tbsp. chia seeds, soaked in 1/4 cup of hot water until slightly thickened

1/4  cup of balsamic vinegar

1/4 cup of apple cider vinegar

juice of 1/2  lemon, or more to taste

1 Tbsp. Dijon mustard

1/3 -1/2 cup roasted red pepper from a jar (in water, no sugar, low salt)

1 clove of garlic, minced

1-2  medjool date, soaked

 

Directions

  • Combine all ingredients in a blender until smooth

Notes

  • I used a regular blender for this recipe
  • I was in a hurry, so I “soaked” the dates in the microwave in water for about 20 second
