This dressing works well over salad, greens, grains or as a dip. Give it a try, it may become a new favorite!
Makes approx. 3/4 cup
Prep Time: 5 minutes Cook Time: 0 (need to soak chia seeds for 30 minutes)
Ingredients
1 Tbsp. white chia seeds
1/4 cup hot water
1/8 cup raw cashews
juice of 1/2 lemon
1/4 cup white balsamic vinegar
1/4 cup brown rice vinegar
1 Tbsp. Dijon mustard
1 tsp. capers
1/2 large Medjool date (optional)
1 small garlic clove, peeled
Directions
- Soak chia seeds in hot water for approx. 30 minutes, until seeds have expanded.
- Add all ingredients to a high-speed blender.
- Start on low, then increase to high. Blend until smooth and creamy, approx. 1-2 minutes.
- Place into a tight-fitting jar and store in the refrigerator.
Notes
Make sure to use a high quality white balsamic vinegar. It makes a huge difference.
If you don’t have a high-speed blender, you may need to soak cashews in water, to soften. You also may need to mince garlic.
