Twice Baked “Fries”

This is one of my favorite ways to eat potatoes. We probably have this at least twice or 3 times a week. If you already have baked potatoes on hand, perfect. One less step and you are even closer to a fast and delicious meal :-).

Ingredients

Yellow potatoes or Russet potatoes, scrubbed and microwaved or oven baked, cooled

Directions

  • Preheat oven to 450F.
  • Line a baking sheet with parchment paper or a silicon mat.
  • Cut baked (microwaved) potatoes into uniform wedges.
  • Place on baking sheet and bake for 25- 30 minutes, or until nicely brown and crisp.
  • Remove from oven and let slightly cool before serving. Enjoy!

Notes

I find that I have better success if I leave the potatoes to cool in the refrigerator. Most weeks I  batch -cook a bunch of potatoes and sweet potatoes, so I tend to have some already in the refrigerator. I don’t even season mine, but you could add dried herbs and spices to give them a different twist. I like to serve them with Home made Ketchup.

    I’m definitely going to try this. We love potatoes, and eat roasted potatoes often, but we do it a bit differently: we chop and roast raw potatoes – with garlic and rosemary (but no oil, of course) until they’re crispy. Takes longer, of course, but so good. Potatoes!!!
