Ooo, this is so simple, not sure it qualifies as a recipe. But it is so delicious, you have to try it. I love the combination of the slightly spicy arugula and bitter kale with the sweetness of figs and fig balsamic. Yummy! Quantities really depend on the number of persons eating. Make more than you think you need, because you will be looking for seconds. A good quality fig balsamic tops this off. (If you can’t find any, a high quality aged balsamic will do).
I am fortunate to have a specialty store in my area that sells aged balsamic and flavored vinegars. If you can’t find any locally, consider ordering on-line. Enjoy!
Prep time: 5 minutes Cook time: 8-10 minutes
Ingredients per person:
2 handfuls of baby arugula
2 handfuls of lacinato kale, cut into bite sized pieces (I leave my stems in, but feel free to remove them)
2 figs, stems cut off and cut into small wedges
fig balsamic for drizzling, to taste
Directions
- Steam kale to your preference (I steam mine for 8 minutes in my Instantpot)
- In a medium to large bowl (depending on servings) add arugula, steamed kale, and figs. The steamed kale will slightly wilt the arugula. Generously drizzle with fig balsamic. Toss and serve. Enjoy!
